Vegetable Cheese Strata

Vegetable Cheese Strata brought to you by The School House Bed and Breakfast in Rocheport MO.

This is a great prep-ahead casserole dish that can be baked in the morning for breakfast or brunch.  Quantities can be easily doubled for a larger crowd.

Prep Time: 15 Minutes
Cook Time: 45 Minutes
Total Time: 1 Hour
Servings: 6-8

Ingredients:

  • 1 small loaf French bread, cut into 1" cubes
  • 1/2 c. minced onion
  • 1 cup fresh vegetables (such as baby spinach and sliced mushrooms or strips of red and orange sweet bell peppers and sliced mushrooms)
  • 2 c. shredded cheese (cheddar or mozzarella or mixture)
  • 8 whole eggs
  • 1 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/2 tsp. cayenne pepper
  • 3 1/2 c. milk

Instructions:

  1. Spray a 9"x13" baking dish with non-stick spray.

  2. Layer cubed bread on bottom of dish. Layer onion then vegetables. Cover with the shredded cheese.

  3. In medium mixing bowl, beat eggs , salt, mustard and cayenne.

  4. Blend in milk.

  5. Pour egg mixture evenly over bread and lightly press with back of large spoon to make sure all bread is soaked with egg mixture.

  6. Cover dish and refrigerate at least 2 hours or overnight.

  7. Bake in 325 degree over, uncovered, for approximately 45 minutes or until casserole is puffed and knife inserted in center comes out clean.

  8. Cut into 6 or 8 squares and serve immediately.

  9. Variation:  One cup of browned, crumbled sausage can also be added with the onion layer.
